Weekend Recap: 40 Weeks In vs. 40 Weeks Out & More

We had a really great weekend that consisted of basically nothing!  Aren’t those kind of weekends the best?

I had seen another blogger do an In vs. Out comparison pic and really wanted to do one.  The last pic I have of myself pregnant was at 40 weeks.  It was during my biggest event of the year – on my due date.  How fun!  My expression, LOL.  I look crabby!

The weather was gorgeous this weekend.  We are glad the temps in NC are not 100 degrees anymore.  Emerson enjoyed watching daddy mow with a nice breeze blowing.

EJM and I headed downtown for a little stroll and shopping.  We ended our travels at a favorite spot where we treated ourselves to some puffs and a glass of rose. 🙂

Sunday we tried something different for lunch.  I have seen a lot of people talk about cauliflower “rice”.  I picked up a bag of it along with a rotisserie chicken.  I followed the EASIEST directions on the back of the package for the most part.  I didn’t use hoisin sauce, just soy sauce  then added some sauteed zucchini from our garden and chopped chicken and WHALAAA!!!  Easy cauliflower chicken fried rice. Stephen isn’t a fan of “carb-free” entrees for the most part, and he liked it.  Emerson gobbled it up for his lunch too.  You should try it!

I had some mama pool time while baby napped in the afternoon – per the usual.  Emerson loved playing with his sensory toys that I made for him out of household items.  He pulled these things out of the cupcake tray and cooking bowl all weekend.  It’s always the weird things that keep them entertained the longest over their stacks of store bought toys isn’t it?!

Does the weekend really have to end?!
