I decided on a whim to get festive by making a Cinco De Mayo Charcuterie Board 🌮💃🏼 The only thing I was missing was a margarita cuz #pregnant! 🍹 My charcuterie board consisted of pork carnitas, sautéed bell peppers, pico, rice, avocado, lettuce, salsa, two kinds of chips – traditional and Fritos, and soft and hard shell tacos! I used whatever I had on-hand, and you could do the same with some mix & match.
This made plenty of leftovers for our family of four, but this would make an excellent casual dinner party spread for a low-key evening.
